No turtle shell in Hoi Tin Tong
By China Daily - Bloomberg

A City University of Hong Kong test found no turtle shell content in most of the samples of Hoi Tin Tong turtle jelly products. Cheung Hon-yeung, associate professor of City University’s department of biology and chemistry, said on a radio program on Thursday that his research team tested the turtle jelly products of 10 brands on the market. No turtle shell content was found in three of four samples of the Hoi Tin Tong brand. And the level of turtle shell content in the fourth sample was almost one-thousandth of other brands. Hoi Tin Tong, which is struggling to recover consumer confidence after a video purporting to show staff washing mold off jelly, responded that its products are made with fresh shells and therefore can’t be tested in ways fitting jelly made with dried shells.
